The housewarming dinner went very well last night. I had three good friends over -- I only own a place setting for four right now, so that was the extent of my housewarming capabilities for now! -- and the dinner turned out quite well. Everyone drank and ate a lot and seemed to have fun.
The boys completely surprised me and bought me a food processor. I have long complained that I can't make my famous carrot cake without a food processor, so they would either have to lend me their food processor or go without since I didn't want to lose my fingers grating three cups of carrots by hand. They have obviously solved that problem for me, so in the coming couple of weeks I shall inaugurate the food processor with a carrot cake for each household who gifted me with such a sweet and thoughtful present. The next task, as one of the gifters noted, will be bringing some to the church and sharing it with the parents I teach to get on their good side.
After all, food is what brings people together, right? I think this recipe has the potential to do that. I once brought it to a party where a professor indulged in two pieces before asking, "Is there dairy in this?" I nodded yes, since it has cream cheese icing. She said, reaching for her third piece, "Never mind; I'm lactose intolerant but it is SO good!" When I sent her the recipe a day later, she replied, "Thank you! I was in the bathroom all night long but it was worth it!"
I took that as a compliment...
